2021 Clos Pegase Cabernet Sauvignon, Milat Ranch, Block 3, St. Helena, Napa Valley
An expressive nose, with a touch of espresso bean, plum, ripe dark cherry and cassis. The palate shows rich, dark fruits, smooth yet bold tannins, a lovely silky texture and crisp acidity. Flavors include cocoa nibs, chocolate-covered espresso beans, crushed ripe plum, a touch of graphite and baker’s spice. This wine will reward careful cellaring for the medium to long term.
Clos Pegase’s winemaking legacy began with André Tchelistcheff, who crafted the inaugural Chardonnay and Cabernet Sauvignon vintages. Tchelistcheff’s pioneering focus on terroir-driven varietal planting laid the foundation for the winery’s philosophy. Today, Winemaker Robin Akhurst leads the team in honoring this legacy through a blend of tradition and innovation. The winemaking approach combines classic techniques with modern practices to highlight vineyard character.
Vintage Notes
Located in the St. Helena AVA, the fruit of Milat Ranch comes from the heart of the Napa Valley floor. Here, a unique combination of rich soil and ideal sun exposure consistently produces grapes of remarkable power and polish.
Winemaker’s Comments
Each block was hand-harvested individually. The clusters were sorted again at the winery, then destemmed, with 50% crushed and 50% whole berries in the fermentation. The must was allowed 2-4 days cold soak followed by a warm fermentation using a variety of different yeast strains. With two pump-overs a day, the wine was only pressed off the skins when dry. It was then sent to barrel to undergo a 2-month malolactic fermentation, racked one more time, and allowed to rest in barrel in our caves. After the 16th month of wine being in barrel the wines were racked clean, gently filtered and bottled.
Food Pairings
Complement the wine’s rich fruit and smooth tannins with savory duck confit, roasted winter squash and garlic mashed potatoes.

From Jan Shrem’s vision of a ‘sanctuary for wine and art’ to Michael Graves’ postmodern landmark on Dunaweal Lane, Clos Pegase has spent four decades treating wine and the visual arts as a single act. Estate vineyards in Calistoga and Carneros, the Hommage Artist Series, and a working sculpture collection continue under the stewardship of Adair Family Wines. Nestled in volcanic soils, the winery boasts 20,000 square feet of wine caves.

You are correct, Sir! The coffee was still brewing and I didn’t have my glasses and it’s Monday and, and… that’s all I’ve got.
I see that almost all the individual block Cabs are $120 on the Clos Pegase site, while the estate Cab goes for $70.
@chipgreen@InVinoVeritas@kaolis@klezman@rjquillin@ttboy23
Well why you knuckleheads fill this thread with posts trying to figure out what this wine is or what the pricing should be all I can think about is I’ve always wanted to try a Clos Pegase wine. Guess I have my chance, carry on lol.
@chipgreen@InVinoVeritas@kaolis@klezman@rjquillin@ttboy23
Well at first I had a different variation of that word in my head but many of you would probably find offensive, not that I really care as you may know but Ron might have banned me
@chipgreen@InVinoVeritas@kaolis@rjquillin@ttboy23 CT distributors do not offer this block from Clos Peg. I use to be a retailer in CT and still have access to the wholesale catalogs to check pricing

Hello friends! Wow, we were incredibly lucky to pull the golden ticket for this one. The bottle shipped to us Wednesday afternoon, and the immediate first thing I noticed was the heft of the bottle–it’s much heavier than average wine bottles, hopefully a sign of good things to come. Since my wife was out of town on a work trip, the bottle went into the wine fridge until we popped it for Friday dinner.
The wine poured a deep garnet, slightly on the lighter side for a cabernet. It took a bit of time for the wine to open up after uncorking, but after about half an hour, there were dark fruits and woodsy slate on the nose. Taste-wise, the wine had the same heft as the bottle, but it was also somewhat brighter and more refreshing than we would have expected. Granted the weather that day was at the beginning of a weekend cold snap, but I could imagine sipping this even on a warm day, something I wouldn’t say for most cabernets. The palate was more spiced cherry or cranberry; some vanilla and tobacco developed over the next hour. Tannins were noticeable but not harsh or astringent, and they seem to be on their way to a lush, velvety texture. The finish is long, and evolves through a range of dried fruit flavors (I could have sworn there was some tangerine in there).
Naturally, a fancy wine like this needs the right meal to match. Accordingly, we present to you:
Clos Pegase Cabernet Sauvignon with Dave’s Hot Chicken Sliders and Crinkle Cut Fries
Hang on, that’s what the kids are having, let’s try again…
Clos Pegase Cabernet Sauvignon with Chipotle Chicken Burrito with Cilantro Lime Sauce
Umm…
Okay Fine, Here’s the Clos Pegase Cabernet Sauvignon with Beef Osso Buco
Now that’s more like it. This works out to be a fantastic pairing. Even with its long finish, the wine never overshadowed the food, instead bringing out the flavors of the stew more intensely. (For the record, it was fine with the sliders, less good with the burrito as it clashed with the cilantro lime sauce.)
We kept half the bottle in the fridge to finish on Sunday, which naturally meant we needed another fine food pairing–
What, Another One? The Last One Wasn’t Enough?
Yeah, we ate all the osso buco the last time around.
Alright Alright, Clos Pegase Cabernet Sauvignon with Chicken Thighs Two Ways: Chinese Hong Shao and Moroccan Tagine
(In all seriousness, I get a ton of use out of the Instant Pot.)
Even a bit chilly from the fridge, the wine seemed even better than our first tasting, with more pronounced aromas. I’d imagine that it would stand up well to many years of aging.
In sum, this is certainly a classy wine in flavor (and bottle weight), well-balanced for a fine meal or drinking on its own. Many thanks to Terry and the Casemates/WCC folks for this opportunity!
How much more are you saving by buying a full case?
(Note: tax and shipping are not included in savings calculations)
2021 Clos Pegase Cabernet Sauvignon - $160 = 23.18%
@Mark_L This being such a large small order penalty is probably keeping many people on the fence or waiting to see if somebody magically shows up to make a spilt happen.
@klezman@Mark_L@winedavid59
I wouldn’t mind trying some either, but th 2-bottle hit absolutely kills it. Three or four for the small order and I’ll listen.
Open for SoCal 3/4-way splits, just can’t/won’t do a full case for the $$$ or the mini for the $$.
@chrisjj625 Hey fellow Rapidian, you ever check out the wine bar in Creston called Good Good Good? Corner of Plainfield and Sweet st. Pretty cool spot.
@jmdavidson1 To me that sounds like it will easily hold up and/or develop more complexity and flavors over the next 2-5 or 10+ years. Also from what I’ve heard is if a wine tastes very ‘tight’ now or needs 30 mins to an hour to open up (as the rat seems to have noted) then that is another sign of further quality aging potential
The Milat family continue to produce great grapes. They used to sell their estate wines but also sold some blocks to Silver Oak who used it to make their Napa cuvee. It’s an exceptional plot of land on Highway 29. Mike and Bob are the best.

Black Tie, on a Monday?
@ttboy23 Very high 2-bottle price compared to other online retailers as well.
[mod; later found to be for the estate, not this block 3 offer]
@InVinoVeritas @ttboy23
I’d be curious where you found any pricing, other than the producer at $120, as CT, wine-searcher and Vivino all come up empty.
@InVinoVeritas @rjquillin @ttboy23 a quick perusal of the net yields no info or pricing for this particular bottle
@InVinoVeritas @kaolis @rjquillin @ttboy23
Free version of Wine Searcher shows an average price of $45, with a featured offer from Gillette Ridge Wine & Spirits in CT of $40.
Wine dot com is sold out of the 2022 vintage, but it was priced at $47.
@chipgreen @InVinoVeritas @rjquillin @ttboy23 those are all for the Estate bottling, not this Block offering

@chipgreen @InVinoVeritas @rjquillin @ttboy23 ha! I resemble every one of those remarks
@chipgreen @kaolis @rjquillin @ttboy23
You are correct, I incorrectly looked up the estate bottling, it looked like the same label in the morning. I can’t edit my post.
@chipgreen @InVinoVeritas @kaolis @rjquillin @ttboy23 isn’t the 5 minute edit window amazing?
@chipgreen @InVinoVeritas @klezman @rjquillin @ttboy23 Well it does preserve a few comments that are made under the influence…

Added a [mod] comment for you for clarity

There is a workaround for all that extends that edit window.

@cduan nicely done… for some reason on the first read through I said to myself I bet the sliders aren’t such a bad match…
@cduan goodone on the food pairing, you hot me

If there were 2 or 3 extra bottles floating around the Chicago area I’d take them at the case price.
@klezman, I ended up pulling the trigger on a case. We can work something out!
If there were 2 or 3 extra bottles floating around the PNW (Portland———->Tacoma area) I’d take them at the case price.
Can anyone offer thoughts on Clos Pegase cabernet in general (value, quality, longevity)?
If anyone around West MI wants to split up a case, I’d throw down for 1-3 bottles.
@whine4winez same
@chrisjj625 @whine4winez either of you ever make it towards Chicago? Realise Western MI is a big area…
@chrisjj625 @jrbw3 I’m on the NE side of GR. I can meet up anywhere in the area that’s convenient if you end up coming this way.
@klezman Unfortunately, I’m not able to make it down that way at this point either.
@chrisjj625 Hey fellow Rapidian, you ever check out the wine bar in Creston called Good Good Good? Corner of Plainfield and Sweet st. Pretty cool spot.
@whine4winez I have not, but I will add it to my list!
@whine4winez Another from SE GR. I’ll have to check out that wine bar too.
Would take up to 3 if anyone in SE Michigan buys.
What does this really mean, you will be rewarded for medium to long term cellaring? How long is that? Does that mean this is really tannic now?
@jmdavidson1 To me that sounds like it will easily hold up and/or develop more complexity and flavors over the next 2-5 or 10+ years. @cduan, if you pop for the case, I’d take 3 bottles off ya!
I would pop for a case if could split 4-ways or more: Boston/So.NH.
The Milat family continue to produce great grapes. They used to sell their estate wines but also sold some blocks to Silver Oak who used it to make their Napa cuvee. It’s an exceptional plot of land on Highway 29. Mike and Bob are the best.
Anyone want to split a case (or if you only want 4) in Tampa?
